Young horse so I want a jointed snaffle for him so that the bit doesn't hit the roof of his mouth and also the copper to help with saliva.

My horse goes well in the eggbutt snaffle. No pinching with the oval link, copper helps salivate and rings help maintain the perfect connection without being as direct as a D ring or less with an O ring.

gentle due to the double broken mouth, little bit of copper might help keep mouth moist (actually, he doesn't need that, because he froths lightly with out the copper.

Will this bit help to soften a hard-mouthed horse? My OTTB mare is still a bit forward and can be very hard to slow down/ stop. She’s a wonderful girl who’s never run away with anyone or misbehaved under saddle, but I need a bit more control with her.

BEST ANSWER: This is generally a mild bit. It's hard to answer your question because a horse that "runs through" the hand like you're describing could have multiple issues: balance, strength, etc. and the solution may be multi-faceted.
How to choose the best bit for my horse?

BEST ANSWER: Honestly, choosing the best bit sometimes comes down to trial and more trial until you find the bit you think your horse does best in.
I would start by asking what bit are you in now and why are you thinking about changing. If possible talk to a professional trainer about how different bits work and maybe borrow some bits to try before buying.
I went with the Korsteel Copper Oval Eggbutt Snaffle after having tried a French Link that my mare hated. She normally dropped her head to take the bit and started not opening her mouth, so I went back to her normal two piece snaffle.
I finally figured out that she prefers a bit that curves forward a bit instead of being very straight across, when I borrowed my nieces bridle to ride one night and she was just a totally different horse.
I talked to my trainer and ordered the Korsteel in the eggbutt and she liked it. She was reaching her head down when I bridle her, but I noticed she didn't want to accept as much contact as with the regular two piece snaffle.
I ultimately bought the Korsteel loose ring copper oval snaffle and my mare and I are happier with it.
Looking back, she had always done best in a loose ring, so I probably should have gone with that in the first place.
My primary concern is that my horse is comfortable, because everything else builds from there.
I meant to ask “Should the 4.75 fit my Paso fino’s mouth?”

BEST ANSWER: Just received one and it's just a tiny bit snug for my Icelandic horse. She needs a five-inch. Can you try a few bits and then measure them to determine your Paso's size? If you decide this size would work for your horse, I will sell mine to you.
Should the 4.5 fit a Paso fino?

BEST ANSWER: We are using 5.0 for our horses. They are in the 15 hands and 1000 pound range. One is a mustang off the range and the other is half mustang / quarter horse from a privately owned herd. The horses are comfortable with the bits and respond well to light pressure.
Can you use this bit in a English Class?

BEST ANSWER: I believe this bit is legal in all English classes, although upper level Dressage may have additional requirements.
Is the link on this Korsteel and copper bit flat or round bean" shape please?

BEST ANSWER: Happy to help! It's oval, round like a bean. Not flat. My big mare, and Paint love it. Very kind, mild bit. I even got one for my little Arab, in 4 3/4 size because it's such a perfect bit for gentle but effective control. You won't be disappointed if you try it.
